- 350g/+12oz Sugar
- 120ml/4fl.oz. Water
- 225g/8oz finely ground Almonds
- 3 Egg yolks
1. Preheat the oven to 170C, 325F, Gas Mark 3 and lightly grease a 22.5cm/9-inch pie dish. Place the sugar and water in a saucepan, bring slowly to the boil then boil rapidly for 5-10 minutes until the syrup sticks to a spoon.
2. Remove from heat, allow cool slightly then add the almonds and the egg yolks and mix well.
3. Return to a low heat and cook, stirring until slightly thickened. Transfer to the prepared pie dish and bake for 45 minutes or until firm. Allow to cool before serving.
