- 1 Onion, chopped
- 1 Garlic Clove, chopped
- 2 tbsp Olive Oil
- 1 ˝ lb Green Beans, cut into 7.5cm/3-inch pieces
- 3 Tomatoes, chopped
- 2 tbsp freshly chopped Parsley
- 1 teasp Sugar
- Salt and Black Pepper
- 1/2 teasp dried Basil
1. Heat the oil in a saucepan, add the onion and garlic and sauté for a few minutes until onion is soft.
Add remaining ingredients, cover and simmer over low heat for 15 to 20 minutes, until the beans are very tender. Serve immediately.
