1. Preheat the oven to 170C, 325F, Gas Mark 3 and lightly grease a 22.5cm/9-inch pie dish. Place the sugar and water in a saucepan, bring slowly to the boil then boil rapidly for 5-10 minutes until the syrup sticks to a spoon. 2. Remove from heat, allow cool slightly then add the almonds and the egg yolks and mix well. 3. Return to a low heat and cook, stirring until slightly thickened.
